Vegetarian Lemon Curd Tart Recipe

For the crust, you will need:

  • 3 large egg whites (lightly beaten)
  • 3 cups of graham cracker crumbs (approx. 18 pieces of crackers)
  • 1/3 cup of unsalted butter (melted)
  • 1/4 cup of granulated sugar

For the lemon curd, you will need:

  • 2 large eggs
  • 2 large egg yolks
  • 1 ½ tablespoon of grated lemon zest
  • ½ cup of fresh lemon juice
  • ½ cup of granulated sugar
  • 1/3 cup of cold unsalted butter (2 2/3 oz.) (cubed)

Making the Crust:

1. Preheat the oven to 350°F. Prepare a 12-cup muffin pan. Insert paper liners into the muffin pan. Lightly put cooking spray into the paper liners. 

2. Mix the graham crumbs, butter, sugar, and egg whites in a large bowl. Mix it well. 

3. Put 3 tablespoons (full) of the batter in the muffin cups. Press the mixture in like copying the inside shape of the cup. Make sure that all sides have a mixture.

4. Put the pan in the oven. Bake for about 12 minutes until lightly brown.

5. Once done, put the pan on a wire rack. Let it cool for 10 minutes. Remove the crusts from the muffin tray. Also, remove the paper liners. Then place the crusts on a plate.

Making the Lemon Curd:

1. Put the butter, eggs, egg yolks, lemon zest, and lemon juice in a medium saucepan. Whisk the ingredients together. 

2. Cook the mixture on medium heat. Stir constantly until it the texture has thickened (approx. 5 min.).

3. Prepare a medium heatproof bowl with a fine-mesh strainer on top and pour the mixture straight into the strainer. 

4. Put the lemon curd in the crust. Distribute equally. 

5. Cover and chill for about an hour.
