Winters are almost here and the weather calls for a hot bowl of soup to warm up ourselves that is not only delicious and healthy but also aids in your weight loss. I present to you the drooling “Weight Loss Vegetable Soup Recipe”. 

I will start with a little story about this soup. I won’t bore you; I promise!

Last week, I and my husband were watching some cooking show on the TV when he told me that he has been craving soup for a while. I quickly got up and went to the pantry only to discover that I don’t have the vegetables that I usually use to make the soup. 

Anyways, I decided to use whatever was available in the pantry that time and tadaaaa!

It turned out so good that we have this soup almost daily. I am having the same soup while writing this recipe for you divas.

What to Put in Weight Loss Vegetable Soup

Broth- I prefer chicken stock for this soup. Chicken broth adds a nice flavor to it. You can even add beef stock or turn it into a tomato veggie soup by adding canned tomatoes. 

I even add the boiled chicken in the soup to get that extra protein. {drool}

Vegetables- That’s my favorite part of this soup. You can add all kinds of vegetables.

For this recipe, I have used edamame, cabbage, broccoli, and celery. 

Mushrooms-They are low in calories and are a great source of antioxidants and vitamins and therefore, are a great item to go in your healthy diet soup.

Noodles- Who doesn’t love carbs? Noodles are a great addition to your weight loss vegetable soup since they help you keep full for a couple of hours which of course means, no binge-eating.

How to Make Vegetable Soup?

  1. Make Broth-Let the chicken cook on a low simmer until done.  
  2. Prep Vegetables-Thoroughly wash your vegetables and chop them. Sort them by their cooking time. Cabbage and edamame can go first since it takes longer to cook while broccoli and celery are quicker to cook. 
  3. Flavour- Add the spices and herbs to your vegetable soup. I like to add a teaspoon of soy sauce and tabasco sauce in the soup for more flavour. 
  4. Simmer- Put the shredded chicken, vegetables in the broth and let it simmer until the vegetables are tender.

Slow Cooker or Instant Pot for Vegetable Soup?

Instant Pot!! It hardly takes 6-10 minutes and I don’t want to keep my starving belly waiting for this delicious vegetable soup.

If you don’t have an instant pot, you can use a slow cooker. Cook on high for 5 hours or low for 7-8 hours or until your vegetables are tender.

Can Vegetable Soup be Frozen?

That’s the best part of this vegetable soup. Most of us are unable to reach our weight loss goals simply because we don’t have time to cook the right food for ourselves and we end up eating lots of junk food. But this vegetable soup recipe can be made on the weekend and frozen to be used for the rest of the week. 

I like to make portions of the soup and use freezer bags to freeze it.
