Saucy Chicken with Cashew Nuts Recipe

Recipe Ingredients

¾ cup Cashew, unsalted and roasted

¼ cup Water

2 tsp Cornstarch

4 tbsp Hoisin sauce

1 tbsp Soy sauce

1 kilogram Chicken breast, cut into pieces

½ tsp Salt

¼ tsp Black pepper, ground

2 tbsp Vegetable oil

6 cloves Garlic, minced

8 bunches Scallion, separate white from green parts and cut into pieces

2 tbsp Rice vinegar

¼ tsp Sesame oil

Recipe Procedure

1. Set the oven temperature for the cashew to 350°F or 177°C.

2. In a baking pan, line the cashew nuts and toast inside the oven until it releases aroma for about 5 minutes. Set it aside for later use because cashews become crispier as it cools down.

3. While you roast the nuts, you may prepare the sauce in a small bowl. Put together the water, cornstarch, soy sauce, and hoisin sauce and whisk until it thickens. Set it aside.

4. Using a large bowl, put the chicken breast, then put the salt and pepper to evenly coat each breast.

5. Heat the 1 tbsp vegetable boil in a frying pan over high heat, and then add half of the chicken into the pan. Stir-fry the chicken until slightly browned for about 3 minutes, then transfer to a plate.

6. Put the remaining vegetable oil and stir fry the remaining chicken with garlic and white parts of the scallion. Fry until it becomes lightly browned for another 3 minutes, then put the first batch of cooked chicken to the pan.

7. Lower down the heat to medium fire, add the rice vinegar and cook until it evaporates for 30 seconds.

8. Pour the sauce into the chicken, toss and cook until the sauce thickens for about 1 minute.

9. Take out chicken cashew from the heat and stir the green scallion, sesame oil, and roasted cashew nuts, then transfer into a serving plate.
