Recipe Ingredients:

240 grams Zucchini, peeled and shredded

200 grams spinach

30 grams Shiitake mushroom

90 grams Tofu, pan-fried

3 tbsp Whole corn kernel

448 grams Water

Seasonings:

1 tsp salt 

1 tsp Black pepper, ground

1 ½ tbsp Peanut butter

1 tbsp Gluten-free Soy sauce

1 tbsp Miso paste

½ tsp Sesame oil

½ tsp Brown sugar

3 tbsp Hoisin sauce

Recipe Instruction:

  1. Prepare and measure all ingredients accurately ahead of time. 
  2. Pan-fry the tofu until it is golden brown using medium fire.
  3. In a large pot, add water and boil, put all the seasonings, and then continue to simmer.
  4. Afterward, taste the soup and add more salt or pepper, depending on your personal preference. 
  5. Add the shredded zucchini, spinach, tofu, corn kernel, and shiitake mushroom. 
  6. Simmer for another 3 minutes or until the greens are already wilted. Make sure not to overcook the vegetables to avoid losing their nutritional benefits.

Recipe Note:

You may also add some meat, chicken, or seafood to your ramen according to your preference and health requirements. Longer cooking time is needed for red meat and chicken.
