Burrito Breakfast – Spicy Mornings

Burrito is not the most common choice for breakfast, and that doesn’t make it less applicable in that area. You will see why.

Burrito Breakfast:

You may be thinking to yourself, wait? Why is every or most of my mornings beginning with  eggs and orange juice? Maybe I want to spice things up. And that is where this little gem comes in handy. It is not considered the most usual choice of breakfast in any way, but that doesn’t make it any less tastier. To ease things on yourself, you can prepare it beforehand and freeze it, so you can eat it whenever you feel like. Or prepare it for a period of nothing more than 30 min. Let’s get started.

Safe to say that there are meals that don’t require that much cooking prowess to accomplish. Even safer is to say that there are ones that do. For the purpose of clarity, we will say straightforward that this one takes a little bit of bravery to prepare. There can be a lot of ingredients that blend with other ones, so the final product that comes out may vary from person to person. Don’t worry, though. We will show you what and how, from the most basic steps that will ensure your burrito looks like a burrito after all; to the ones that are for the Mexican kitchen at heart.

Health side:

Burrito can be a very heavy meal. Reason being is the tortilla. Corn tortilla is much healthier than the flour counterpart, and it contains more fiber and magnesium. On top of that, lower amounts of fat, carbs and calories make it a better choice for the meal we are preparing.

Beans are another ingredient in the burrito. They contain a complex sugar called raffinose, which as you may know, produces a lot of not so noble gasses. Our sincerest advice is to walk whenever beans are in the game, so you don’t ruin many friendships. Beans also have a lot of fiber, and fibers are bound to produce gasses.

Jokes aside, beans can truly be called superfood. They are very rich in antioxidants, fibers, carbohydrates and protein.

Chicken breast is also here. No special introductions needed. Staple food rich in lean protein.

Cheese is also a great source of calcium, fat and protein. It is calorically dense, so make sure to not indulge if you are maintaining a weight regime.

Ingredients:

  • Brown rice
  • Water
  • Chicken breast
  • Black beans (use brands that you can find)
  • Lime juice
  • Corn or wheat tortillas (low fat if possible)
  • Cheese

As we have promised in the intro, this can be really simple or really not simple. Depending on you. Don’t worry, we will show you how to.

First instance of difficulty is the cheese. Finding all the brands and types is not always easy. Generally, you should look for mild and melted cheese. Monterey Jack and mild cheddar are good choices. When you eat burrito from a fast food chain, they usually have the machine to steam them and to make cheese melt, so. Secret revealed.

Next thing are the beans. There are so many brands, and to tell you the truth, use the ones that you like. As with everything, pushing into overdrive won’t do you no good.

Preparation:

While the rice is cooking, drain and rinse the beans. Cut the chicken breasts into long, thin, stripes. Put the beans and the chicken along with (preferred) salsa into a microwave bowl, and microwave it until hot.

Put the rice in a bowl, and add lime here if you want. You can also add scrambled eggs, onion, lime juice; in this portion. Mix until well blended.

Heat tortillas. This one can be tricky. Best thing is to prepare a lot of them, so you can reap the benefits of this method. Use about 8 of them, and place them in a tin foil pre-heated 350° oven for 15-20 minutes. You can also gas them over the gas flames, and flip them with tongs. Few seconds is enough. You can eat them cold as well, but they are intended to be eaten warm, and they will break down and create mess when cold.

Put the chicken mixture onto the tortilla. Right in the middle. After you are done, you can add sour cream at this stage. Add rice mixture on top of that, and sprinkle with cheese. Or glaze it. However you like.

Fold sides at the same time. After that, fold ends over, or eat it like a pancake, if you are not feeling very risky.
