Eggplant and Hummus Burger Recipe

Recipe Ingredients:

For the Hummus:

  • 2 cans chickpeas, drained and rinsed
  • 3 cloves garlic, chopped
  • ¼ cup olive oil
  • 1 pc lemon, juiced
  • 2 tbsp tahini sauce
  • 1 tsp ground cumin
  • Salt to taste
  • For the Burger:
  • 1 pc fresh eggplant, sliced round
  • ¼ cup olive oil
  • 1 tsp paprika powder
  • ½ tsp garlic powder
  • ½ tsp red pepper flakes (optional)
  • ½ tsp iodized salt
  • ½ tsp black pepper
  • 2 hamburger buns
  • Lettuce to serve
  • 1 pc red onion, sliced (to serve)

Recipe Procedure:

1. Prepare a food processor and put the chickpeas, tahini, garlic, lemon juice, and salt inside and mix until it becomes very smooth in texture.

2. Slice your eggplants into 2 1/2 cm or 1 inch, then sprinkle it with salt and leave the eggplant for 20 to 30 minutes, and pat it dry.

3. Using a small bowl put together the oil, garlic powder, paprika, salt, red pepper flakes, salt, and pepper. You may omit the red pepper flakes if you have a low tolerance to spice.

4. Using a pastry brush, brush each side of the eggplant with the oil and top it with the spice mixture.

5. Prepare the griller and set to medium fire and cook each side of the eggplant for 3 to 4 minutes, set it aside.

6. Assemble your burger by putting the hummus on the sandwich and two pieces of eggplant for each burger. You may also add some lettuce and red onion, depending on your preference.
